My best guess is that they had to wait for Earth. Unfortunately, they detoured through a field of Leola roots and had to make some weird cheese that bunged up the Bio-neural gel packs. Turns out that the ship doesn’t like macaroni and brill cheese (from Schplict) as much as Ensign Ashmore did. Good food is risky business in the Delta Quadrant.

Am I remembering correctly, or are there actually scenes where the crew occasionally did enjoy Neelix’s cooking? Or was it just the Talaxian (plus or minus Leola root) dishes they complained about?
Neelix is the best cook in all of Star Trek history. The Voyager crew is just insufferable ingrates.

At the beginning they only had one variety of food, so they hated it with a passion. On the later episodes it varied, some people liked it, some didn’t.
I’m more bothered by Sponge Bob. He’s the chef of the most successful restaurant there.

Somewhere further down the road he gets some compliments. May be a case of Stockholm Syndrome.
